What does a water filter actually do for an ice machine?

Ice is food — that is the whole reason a documented cleaning program is not optional.

What is the black or pink slime in my ice bin?

Pink slime is usually Serratia marcescens and the black is typically mold or yeast growing on the moist plastic and gaskets. Both feed on airborne sugars and flour in a kitchen, and neither is killed by simply rinsing the bin. It takes a full teardown, an NSF-listed sanitizer on every surface the ice touches, and a look at why the bin is staying wet between fills.

The usual suspects are a clogged or improperly sloped drain line, a cracked or dislodged water trough, a failed inlet water valve that will not fully close, or a door gasket letting warm air in so the bin sweats. Is my machine air-cooled, water-cooled or remote — and does it matter?

It matters a lot. Air-cooled units are cheapest to run but lose production fast in a hot back-of-house above about 90°F. Water-cooled units hold production in heat but burn water and scale internally. Remote condensers move the heat outside and are the right answer in tight, hot kitchens. We look at your room temperature before recommending a replacement platform.

What is VOC water and why does it matter for ice?

VOC stands for volatile organic compounds — the chlorine, solvents and taste-and-odor compounds that ride along in municipal supply water. They do not scale a machine, but they absolutely end up in the flavor of your ice, your soda and your coffee. Carbon filtration handles most of it; reverse osmosis handles the rest along with the dissolved minerals.
