How often should a commercial ice machine be cleaned?

Most manufacturers — Hoshizaki, Manitowoc, Scotsman and Follett included — require a full cleaning and sanitation at least every six months to keep the warranty valid. High-volume kitchens, poor water quality, or units in hot back-of-house spaces usually need quarterly service. Health inspectors treat ice as a food product, so documented cleanings matter as much as the cleaning itself.

Why is my ice machine making cloudy or soft ice?

Cloudy ice is almost always water chemistry: high total dissolved solids, scale on the evaporator, or a filter that is past due. Soft or shrinking cubes usually point to a short harvest cycle, low refrigerant charge, or restricted water flow. A technician should test incoming water and inspect the evaporator before any parts get replaced.

How much does commercial ice machine repair cost?

Most repairs land between a diagnostic-only visit and a mid-range component replacement such as a water valve, pump, or control board. Compressor and evaporator work costs significantly more, which is why preventative maintenance members pay far less over the life of a machine.
